Easy Almond Stir-Fry (GF, Paleo, Vegetarian Option)

I love to cook but often times, my recipe creativity is down the drain by the time I’m ready for dinner. At that point I just want food and something easy usually does the trick. I make a variation of this stir-fry probably somewhere close to four times a week because I love it so much. It’s quick, tasty, and incredibly versatile as you can use any vegetables you have on hand, remove the meat, etc.

Stir Fry

You Will Need (serves 1 hungry person):

1 small to medium zucchini
1 small sweet potato
4 oz. your favorite meat (I love ground turkey, ground beef or chicken for this)
1 cup cauliflower
2 small mushrooms
1-2 slices of onion
1/3 head bok choy
1/2 bell pepper
1 handful spinach
1 small carrot
1 clove garlic
1 cup water
Salt and pepper to taste
1 egg
1/4 tablespoon cooking oil, like coconut or cooking spray
1/2 tablespoon almond butter (or peanut butter)
Liquid aminos (or soy sauce)
sriacha (optional-if you like it spicy)
1/4 cup diced pineapple (optional)

To Make:
Begin by preparing your meat. Grease a large skillet and add meat and garlic to it, cooking over medium-high heat. If you are using ground beef or turkey, break it into little pieces. For chicken, slice into strips or small chunks.

While the meat is cooking, prepare your vegetables. Peel the zucchini into strips to make “noodles” (or simply cut into chunks), grate your sweet potato so it cooks quicker, and cut everything else into small pieces.

When the meat is 95% cooked, add all the vegetables to the pan except the zucchini, if you made it into noodles. If chunked, add to the pan.

Pour about 1/2 a cup of water to the pan, salt and pepper to taste and stir everything around. Put about 1 tablespoon of soy sauce/liquid aminos into the pan and sriacha if using and stir again. If adding pineapple, put it in here as well.

Allow all the vegetables to simmer and get soft. If the water evaporates before the vegetables are done, add more.

When the vegetables are almost done, push everything to the sides to make a small hole. Drop in the almond butter and let it melt. Then stir around.

Do the same thing again and drop the egg into the middle. Let it begin to cook, then chop it up into small pieces using a spatula and stir it around into the vegetables to allow it to finish cooking.

Remove from heat, serve and enjoy!
